Guacamole

                  3 medium, ripe Haas avocados
                  2 ripe tomatoes, chopped fine
                  1 bunch green onions, sliced fine
                  .25 c red onion, minced
                  1 teaspoon minced garlic
                  1-4 minced fresh jalapenos
                  .5 teaspoon salt 
                  1 Tablespoon minced jalapenos
                    en escabeche, or nacho jalapenos
                  1 Tablespoon fresh lime juice

      Peel the avocados and remove pits. put all ingredients
      in a large bowl and mash with a fork to desired
      consistency. This guacamole is meant to be coarse and
      chunky, but you can put it in a blender if you want
      it homogenized.  Not recommended, but it's your
      guacamole.
