Spinach with Lentils and Ginger


                     1 cup picked over, washed, plain lentils
                     3 cups water
                     .33 cup vegetable oil
                     2 teaspoons minced ginger
                     3 jalapenos, minced
                     3 jalapenos, sliced
                     2 lbs spinach, washed well, de-stemmed,
                        chopped
                     2 teaspoons salt
                     black pepper
                     3 Tablespoons lemon juice.
                     lemon wedges

    cook lentils in water at a simmer for 1 hour, or until tender.
    heat oil, add the minced jalapenos and ginger. fry for 20 seconds.
    add spinach, stir and cook until spinach wilts. add the lentils
    and salt.  simmer for about 1/2 hour, add black pepper and lemon
    juice, stir to mix, pour into serving dish and top with sliced
    jalapenos and lemon wedges.
