Tofukatsu

		1 block extra firm tofu
                salt, pepper
                1 egg, lightly beaten
                .5 cup flour
                1 pkg panko
          
    Slice tofu into .5 inch slices, salt and pepper,
    then dip in egg, coat with flour, dip in 
    egg again, and coat with panko crumbs.
    allow to dry for a few minutes on wire grate.
    heat oil to point where panko crumb expands
    immediately when tossed in. fry tofu until
    golden.
    serve with tonkatsu sauce, coleslaw, rice,
    pickled ginger and kirin.
